Homemade muffins like these make wonderful hostess gifts. Simply wrap them in foil and add a bow!

Ingredients

Cooking spray

Butter

4 tbsp(s)

Unpacked brown sugar

Raw egg

1 large

Banana

3 large, or 4 medium, mashed

Vanilla extract

1 tsp(s)

Lemon zest

1 tsp(s), grated

All-purpose flour

Baking powder

1½ tsp(s)

Baking soda

Ground cinnamon

Table salt

Chopped walnuts

Powdered sugar (confectioner's)

Instructions

  1. Preheat oven to 350°F. Coat 18 mini muffin tins with cooking spray.
  2. In a large mixing bowl, cream the butter and brown sugar. Add egg and mix until incorporated.
  3. Add the mashed bananas, vanilla, and lemon zest. Mix until smooth.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  5. Working quickly, add the dry ingredients to mixer in thirds, until thick batter forms. Try not to overmix the batter.
  6. Divide batter among muffin pans. Bake until a toothpick inserted into centre comes out clean, about 10 to 12 minutes. Let cool in pans for 10 minutes before inverting onto a rack to cool completely.
  7. To make frosting, blend powdered sugar and lemon juice together. Drizzle over cooled muffins. Garnish with chopped walnuts.

Notes

If you prefer the chopped nuts in the muffins, simply fold them into the batter before baking.
