Ingredients

Cooking spray

Fresh baby spinach

2 cup(s)

Fresh mushroom(s)

1 cup(s), sliced

Uncooked onion(s)

½ cup(s), chopped

Egg(s)

4 large egg(s), lightly beaten

Brie cheese

½ cup(s), sliced

Avocado

2 medium, chopped

Instructions

  1. Heat cooking spray in a large nonstick skillet over medium heat. Sauté spinach, mushrooms, and onions.
  2. Add the eggs to a mixing bowl and beat lightly. Add eggs to skillet and cook until the eggs are almost set, lifting the edges frequently with a heatproof rubber spatula to allow the uncooked egg to flow underneath.
  3. Preheat oven to 350°F. Sprinkle the eggs with the avocado and brie cheese. Place the frittata in the oven for 10-15min.
  4. Cut into 4 wedges. Serve hot, warm, or at room temperature.
  5. Yields 1 wedge per serving.
