Mushrooms

Onion

4 large, lightly beaten
Brie cheese

Avocado
2 medium, chopped
Instructions

Heat cooking spray in a large nonstick skillet over medium heat. Sauté spinach, mushrooms, and onions.

Add the eggs to a mixing bowl and beat lightly. Add eggs to skillet and cook until the eggs are almost set, lifting the edges frequently with a heatproof rubber spatula to allow the uncooked egg to flow underneath.

Preheat oven to 350°F. Sprinkle the eggs with the avocado and brie cheese. Place the frittata in the oven for 10-15min.

Cut into 4 wedges. Serve hot, warm, or at room temperature.
