A dream come true: Crispy-coated fish fillets, baked not fried, nestled inside tender rolls. For a tangy tartar sauce, combine fat-free mayonnaise and pickle relish.


Ingredients
Olive oil cooking spray
1 spray(s), or enough to coat pan and fish
Seasoned breadcrumbs
½ cup(s), Italian-style
Dijon mustard
¼ cup(s)
Mixed grain hamburger roll

Lettuce
8 piece(s)
Uncooked lingcod fillet
1¼ pound(s), four 5 oz pieces
Tomato
1 small, sliced

Preheat oven to 400ºF. Coat a large baking sheet with olive oil cooking spray.

Place bread crumbs in a shallow bowl. Coat both sides of each cod fillet with mustard and then turn fish in bread crumbs to coat. Arrange fillets on baking sheet and spray surface with cooking spray. Bake until fish is fork-tender and coating is golden brown, about 20 minutes.

Place fish on rolls and top each with 1/4 of lettuce leaves and tomato slices.
