Eggs are an inexpensive source of complete protein. Enjoy them for any meal of the day. They're wonderful served with roasted sweet potatoes and salad, or regular potatoes if you prefer, but equally enjoyable hard-boiled and sliced over sweet potato toast, or scrambled into fried rice. Roast the sweet potatoes for this meal ahead of time so they'll reheat quickly while you make the eggs.

Egg

Sweet potato

1 cup(s), roasted without oil, made with cooking spray and seasonings of your choice

Mixed greens

1 cup(s)

Tomato

½ small, sliced

Cucumber

½ cup(s), sliced

Plain fat free Greek yogurt

3 tbsp(s)

Zesty herb sauce

1 tbsp(s), search for the recipe on the WW app

Table salt

Instructions

  1. Cook eggs in a nonstick skillet until desired degree of doneness. Serve with warmed sweet potato wedges, and a salad of mixed greens, tomato, and cucumber drizzled with yogurt mixed with the herb sauce. Season to taste with salt and pepper.
