Impress guests (with very little effort) with these divine fresh fruit treats. They're small, but perfectly formed and will hit the spot!


Ingredients
Tart shells

Light cream cheese
100 gm
Lemon
1 medium, zest
Vanilla extract
1 tsp(s)
Vanilla lowfat yogurt
¼ cup(s)
Strawberries
¼ cup(s), halved
Blueberries
¼ cup(s)
Raspberries
¼ cup(s)
Fresh mint leaves
4 sprig(s), to decorate
Instructions

Bake tart shells according to package instructions. Set aside.

Arrange the tartlets on a tray or serving plate. Use a wooden spoon to beat the soft cheese until smooth, then beat in the lemon or lime zest and yogurt. Spoon into the tartlets.

Decorate the tartlets with the fresh fruit and mint leaves. Refrigerate until ready to serve.
