Fresh cranberry-apple relish

Delicious and vibrant, no-cook cranberry sauce is ready in a snap. Just a few pulses in the food processor and you've got a versatile relish with big flavour.
1 large, Fuji, peeled, cored, cut in chunks
½ tsp(s), grated
- Put cranberries and apple in a food processor; pulse until finely chopped. Combine with sugar, lemon zest and salt in a medium bowl. Cover and refrigerate at least 30 minutes for flavours to blend. Yields about 37 ml (2 1/2 Tbsp) per serving.
This relish keeps well - make up to 1 week in advance. Frozen cranberries work as well as fresh (no need to defrost).
