Aji verde is a classic Peruvian sauce that’s creamy, herby, and spicy. It’s typically made with cilantro, hot peppers, mayonnaise, and cheese and served alongside spice-rubbed roast chicken—though it also pairs well with grilled fish, roasted potatoes, rice and beans, or salads. We use a combination of light mayo and plain Greek yogurt to keep the sauce light and the flavours bright.

Ingredients

Cilantro

2 cup(s), coarsely chopped (leaves and stems)

Light mayonnaise

cup(s)

Plain fat free Greek yogurt

cup(s)

Cotija cheese

¼ cup(s), crumbled or grated Parmesan

Fresh lime juice

2 tbsp(s)

Kosher salt

½ tsp(s)

Jalapeño pepper

2 medium, seeded if desired, chopped

Garlic

2 clove(s), large

Instructions

  1. Place all of the ingredients in a food processor or blender. Process until smooth and creamy, about 1 minute, stopping occasionally to scrape down the sides of the bowl.
  2. Serving size: about 2 scant tbsp
