Aji verde is a classic Peruvian sauce that’s creamy, herby, and spicy. It’s typically made with cilantro, hot peppers, mayonnaise, and cheese and served alongside spice-rubbed roast chicken—though it also pairs well with grilled fish, roasted potatoes, rice and beans, or salads. We use a combination of light mayo and plain Greek yogurt to keep the sauce light and the flavours bright.


Ingredients
Cilantro
2 cup(s), coarsely chopped (leaves and stems)
Light mayonnaise

Plain fat free Greek yogurt
⅓ cup(s)
Cotija cheese
¼ cup(s), crumbled or grated Parmesan
Fresh lime juice
2 tbsp(s)

Jalapeño pepper
2 medium, seeded if desired, chopped

Instructions

Place all of the ingredients in a food processor or blender. Process until smooth and creamy, about 1 minute, stopping occasionally to scrape down the sides of the bowl.
