To make life easy, you can cook this French toast before everyone shows up for breakfast. Place a wire rack over a baking sheet and set in a 200°F oven. As batches are done, place them on the rack; keep warm up to 30 minutes. If you’ve got fresh berries, serve them along with the sauce.

Ingredients

Unsweetened frozen strawberries

¼ cup(s)

Water

8 fl oz

Sugar

1 tbsp(s)

Egg

4 pound(s)

1% low fat milk

¾ cup(s)

Vanilla extract

1 tsp(s)

Ground cinnamon

¼ tsp(s)

Whole wheat bread

8 slice(s)

Canola oil

2 tsp(s)

Instructions

1

To make sauce, combine strawberries and water in small saucepan and set over low heat. Cook, stirring occasionally, until berries are thawed and saucy, about 2 minutes. Remove saucepan from heat and stir in sugar until dissolved. Set aside.

2

To make French toast, beat eggs, milk, vanilla, and cinnamon in large shallow bowl. Dip bread, one slice at a time, into egg mixture until well coated on both sides.

3

Brush oil on griddle or over bottom of very large nonstick skillet and set over medium heat. Cook French toast, in batches, until deep golden, about 2 minutes per side, transferring to plate as it is done, covering to keep warm. Place 2 pieces of French toast on each of 4 plates and spoon sauce on top.

4

Serving size: 2 slices French toast and about 1/4 cup sauce
