If you’re a blueberry lover, you’ll definitely get a thrill out of this pie. It features a load of fresh, juicy berries that are tossed in a little bit of fruit spread as a glaze—so the focus is squarely on the fruit itself. Be aware that slices don’t exactly hold up perfectly; the fruit tends to tumble out. But that doesn’t affect the flavour one bit.

Reduced sugar raspberry jam

½ cup(s), or other berry flavour

Blueberries

4½ cup(s)

Reduced-fat graham cracker pie crust

1 crust(s)

Lite whipped topping

1 cup(s)

Instructions

  1. In a large bowl, stir fruit spread until smooth. Add berries and toss gently to coat. Spoon berries into pie crust. Cover and chill for at least 2 hours. Serve with whipped topping.
  2. Serving size: 1 pie slice and 2 tbsp whipped topping

Notes

You can make the pie up to a day ahead, if you’d like; served cold, it’s a refreshing dessert for a hot summer day.
