Convenient high-protein pancake mix is the easy, hearty base of these pancakes for a crowd. Fresh apples and a little cinnamon sugar gussy them up with fruity goodness and warm spice. Sprinkling the cinnamon sugar on the top allows it to have a bigger flavour impact than if you stirred it in, which helps you use less sugar overall.

3 medium, red-skinned, cored and thinly sliced

Sugar

Instructions

  1. Preheat the oven to 400°F. Coat an 18 x 13–inch sheet pan with cooking spray.
  2. In a medium bowl, stir together the pancake mix and 2 ½ tsp of the cinnamon. Stir in 3 cups of water until just combined. Pour the batter into the prepared pan, smoothing into an even layer. Arrange the apple slices over the batter. In a small bowl, stir together the sugar and remaining ½ tsp cinnamon; sprinkle evenly over the apple slices.
  3. Bake until a wooden pick inserted in the center comes out clean, 20 to 23 minutes. Cut into 12 equal pieces.
