Olive oil

Red wine vinegar

Dijon mustard
½ tsp(s)
Garlic
½ clove(s), large, finely chopped
Jennifer Fisher Spicy salt
⅛ tsp(s), or Universal salt
Black pepper
⅛ tsp(s)
Canned salmon
3 oz
Onion
1 cup(s)
Jalapeño pepper
1 medium, seeded and finely chopped
Cilantro
2 tbsp(s), roughly chopped
Lime
½ wedge(s)
Avocado
¼ medium
Instructions

In a medium bowl, whisk together the oil, vinegar, mustard, garlic, Spicy Salt, and black pepper. Add the salmon and mix until well combined. Season with additional Spicy Salt and black pepper, to taste.

Add the white onion, jalapeno, and cilantro. Toss to combine. Squeeze the juice from the lime.

Arrange the avocado on a plate and spoon the salmon on top.

Serve with 1 oz plantain chips, if desired (add 5 points).
