No, it’s not your imagination: Everything bagel flavours have been popping up everywhere. That particular mix of onion, poppy seeds, and sesame seeds is hard to resist, especially when tossed into a cozy breakfast bake topped with gooey cheddar and crispy bacon.

Ingredients

Cooking spray

Shallots

2 item(s), thinly sliced

Baby spinach

6 oz

Egg

1% low-fat milk

Dry mustard

Everything bagel thins

8 bagel(s), cut into 1-inch pieces

Low fat cheddar or colby cheese

3 oz, shredded

Cooked crisp center cut bacon

4 slice(s), coarsely crumbled

Everything bagel seasoning blend

1 tbsp(s), for garnish (optional)

Instructions

  1. Coat a 12-inch nonstick skillet with cooking spray and heat on medium. Add the shallots and cook until softened, about 3 minutes, stirring occasionally. Gradually stir in the spinach and cook until wilted, 2 to 3 minutes. Remove the pan from heat.
  2. Coat a 2-quart baking dish with cooking spray. In a large bowl, whisk the eggs, milk, mustard, salt, and black pepper. Arrange the bagel pieces in the prepared baking dish. Top with the spinach mixture, tucking some of the spinach under the bagel pieces. Sprinkle with the cheese, then the bacon. Pour the egg mixture over the top. Cover with foil and refrigerate for 8 to 12 hours.
  3. Preheat the oven to 350°F. Cover the strata with foil and bake for 30 minutes. Uncover and continue to bake until the strata is set and lightly browned, 20 to 25 minutes. Garnish with the everything bagel seasoning (if using). Cut into 6 pieces.
