You'll love these easy pizzas made with a few store cupboard ingredients and some tasty goat's cheese.

Ingredients

English muffin

4 item(s)

Yellow bell pepper

1 large, roasted and thoroughly rinsed

Canned tomato paste

1½ tbsp(s), (sun dried tomato paste if available)

Olives

12 large, in brine

Soft-type goat cheese

75 gm

Fresh thyme

2 tsp(s), or a few sprigs of fresh thyme

Black pepper

½ pinch(es), freshly ground, black

Instructions

Preheat grill. Toast english muffins lightly.

Tear the pepper into smaller pieces.

Spread each english muffin with 1 tsp tomato paste or puree. Top each one with an equal amount of peppers, 3 olives and a slice of goat’s cheese. Add thyme sprigs and season with black pepper.

Grill for 2 – 3 minutes, until cheese begins to brown and bubble. Serve at once.
