Ingredients
Reduced-sodium chicken broth
1 cup(s), or Easy soup base
Edamame (shelled)
⅓ cup(s), frozen
Cornstarch
1½ tsp(s)
Water
1 tbsp(s)
Raw egg
1 large, beaten
Uncooked scallions
½ small, thinly sliced
Radishes
1 medium, thinly sliced
Instructions

Bring broth or soup base to boil in small saucepan. Add edamame and cook until tender, about 5 minutes. Meanwhile, whisk together cornstarch and cold water in cup until smooth. Reduce heat so broth simmers. Slowly whisk cornstarch mixture into broth; simmer until thickened, about 1 minute. Slowly drizzle beaten egg into broth while stirring in circular motion. Cook 1 minute. Pour into bowl and sprinkle with scallion and radish and serve with soy sauce, if desired.
