Ingredients

Olive oil

Onion

½ small

Garlic clove

1 clove(s), medium, crushed with side of knife

Reduced-sodium chicken broth

4 cup(s)

Table salt

1 pinch(es), or to taste

Black pepper

1 pinch(es), or to taste

Instructions

  1. Heat oil in medium saucepan over medium heat. Add onion and garlic and cook, stirring, until onion softens, about 3 minutes. Add broth and bay leaf (if using). Bring to boil over high heat. Reduce heat and simmer a few minutes. Discard bay leaf. Season to taste lightly with salt and pepper. Broth can be refrigerated up to 3 days or frozen for several months. Makes 4 cups.
