In just over one hour, and all on one pan at one constant oven temperature, you can have a festive Christmas dinner for four people. It features glazed ham, herbed apples with onions, Parmesan-crusted sweet potatoes, and roasted broccolini. Look for a small chunk of presliced ham either near the deli or breakfast meats, or near the full-sized hams (often near the turkeys). Keep the ham intact as it cooks—don’t separate or fan out the slices—so that it stays moist and juicy within.

Canola oil

Cooked ham

1 pound(s), boneless, presliced

Frozen pearl onions

1 medium, cored and cut into wedges

Instructions

  1. Preheat the oven to 400°F. Lightly coat a sheet pan with cooking spray. In a large bowl, toss together the sweet potatoes, 1 tbsp oil, and ¼ tsp each salt and black pepper. Shingle the potato slices over one quarter of the pan. Bake at 400°F for 20 minutes.
  2. Meanwhile, in a small bowl, stir together the preserves and mustard. Fold a large piece of heavy-duty foil in half, then crimp up the edges to form a “boat.” Place the ham chunk on the foil, keeping the chunk intact (don’t separate the slices). If you need to, run a skewer through the ham to keep it intact. Brush half of the glaze over the ham. In the large bowl used for the sweet potatoes, toss together the onions, apple, and 1 ½ tsp oil. Sprinkle with the thyme and toss to coat. After the potatoes have cooked for 20 minutes, remove the pan from the oven. Place the ham (on the foil) on one quarter of the pan and arrange the apple mixture on another quarter. Bake at 400°F for 15 minutes.
  3. Meanwhile, in the large bowl, toss together the broccolini, remaining 1 tbsp oil, and remaining ¼ tsp each salt and black pepper. After the ham and apples have cooked for 15 minutes, remove the pan from the oven. Arrange the broccolini over the remaining quarter of the pan. Sprinkle the Parmesan over the sweet potatoes. Brush the remaining glaze over the ham. Bake at 400°F until the sweet potatoes are tender and the broccolini is crisp-tender, about 15 minutes. Remove the pan from the oven. Fan out the ham slices and brush with any collected glaze at the bottom of the foil.
