This easy salad dressing is luxuriously creamy, bright with lemon zest and juice, and savory with a hint of cheesy flavour from nutritional yeast. Avocado is the star, contributing its rich, slightly sweet flavour and supreme creaminess. In a blender, it emulsifies beautifully with water and oil into a dressing that stays stable (creamy, without browning) for days in the fridge—so you can make it on the weekend for salads throughout the week. You can use fresh avocado or frozen; if using the latter, you might need to blend a little longer to get the dressing completely smooth.
