Easy Chicken Taco Bowl
Sometimes, the best busy-day, time-is-tight meals are ones that you assemble instead of cook. Here’s a great example: a rice bowl that you build from convenience foods—precooked rice, rotisserie chicken, packaged coleslaw mix, and salsa. Of course, creamy avocado is the perfect finishing touch. Since all of the seasoning comes from the salsa (which you’ll mix in when you’re ready to eat), choose one that delivers the flavours you love, from spicy to mild to tangy to roasty. Serve the rice and chicken chilled, heated, or at room temperature.
Cooked long grain brown rice
Skinless rotisserie chicken breast
12 oz, shredded
Packaged coleslaw mix (shredded cabbage and carrots)
2 medium, sliced
- Into each of 4 large, shallow bowls, arrange ½ cup rice, 3 oz chicken, 1 cup coleslaw mix, and ½ an avocado. Top each serving with 1/4 cup salsa.
