Easy Butternut Squash Gratin

Warm up with this hearty squash casserole. Salty feta is a super complement to the sweet squash.


Ingredients
Cooking spray

Butternut squash
6 cup(s), diced (about 7 oz)
Red onion
½ medium, thinly sliced (1/2 cup)
Olive oil
1 tbsp(s)
Fresh sage
1 tbsp(s), chopped (plus extra leaves for garnish)
Ground cumin
1 tsp(s)
Chili powder
½ tsp(s)
Black pepper
½ tsp(s)
Orange zest
½ tbsp(s), finely grated
Whole milk
1 cup(s)
Crumbled feta cheese
3 oz, fresh French feta preferred
Panko breadcrumbs
¼ cup(s)
Instructions

Preheat oven to 425°F. Place oven rack in middle of oven. Coat a large (13-in) oval gratin dish with cooking spray (or any 9- X 13-in baking dish); set aside.

Combine squash, onion, oil, sage, cumin, chili powder, pepper and zest in prepared dish; toss well and distribute evenly. Pour milk over dish and tightly cover with aluminum foil; bake until squash is just barely tender, 25 minutes.

Remove foil from pan and sprinkle evenly with feta and panko; reduce heat to 350°F. Bake, uncovered, until panko is just golden and squash is tender, 10-15 minutes. Remove from oven; let cool 5 minutes. Garnish with sage; serve.
