You’ll love our surprisingly simple hack for healthier eggnog. Light ice cream is softened quickly in the microwave, then whisked together with low-calorie unsweetened almond milk and ground nutmeg. That’s it! The ice cream lends body, sweetness, and richness to the nut milk, and the nutmeg creates that just-right holiday flavour. You can double or triple the recipe for a party; serve in a punch bowl, and set out whole nutmeg and a grater so guests can add more spice to their liking.

Ingredients

Light vanilla ice cream

2 cup(s), or French vanilla flavour

Unsweetened vanilla almondmilk

2 cup(s)

Freshly grated nutmeg

½ tsp(s), plus more for garnish

Instructions

  1. Remove lid and top film from pint of ice cream. Microwave ice cream, uncovered, at 50% power until soft, about 1 minute.
  2. In a large bowl, whisk together softened ice cream, almond milk, and nutmeg until smooth. Divide egg nog evenly among 4 glasses and garnish with additional nutmeg, if desired.
  3. Serving size: ¾ cup
