The ice cream truck doesn't offer anything close to these heavenly frozen treats. These dreamy ice pops get a triple dose of raspberry flavour from the fibre-packed berries, creamy raspberry yogurt, and an optional splash of sweet raspberry liqueur, such as Chambord. Two teaspoons may not seem like much, but if you have the liqueur on hand, that tiny dose adds loads of berry complexity to these ice pops with no effects of alcohol. These make a delicious dessert, but are also a tasty after-exercise cooldown that provides a nice shot of protein.

Ingredients

Raspberries

1½ cup(s), fresh or frozen

Raspberry lowfat yogurt

6 oz

Water

½ cup(s)

Honey

¼ cup(s)

Fresh lemon juice

1½ tsp(s)

Raspberry liqueur

2 tsp(s), optional

Instructions

  1. Combine all ingredients in blender or food processor and puree. Push puree through strainer; discard seeds.
  2. Divide mixture among 6 (⅓-cup) ice pop molds. Cover molds with tops and insert wooden craft sticks. Freeze until completely frozen, 6 hours or up to 1 week.
  3. Serving size: 1 ice pop

Notes

If you don’t have ice pop molds, make these in paper cups: Spoon the mixture into 3-ounce paper cups and cover each with foil. Make a small slit in the foil and insert a wooden craft stick. Freeze as directed. Remove the foil and tear away the paper cups to serve.
