Studded with chopped walnuts and fresh dates, this delicious slice is rich, dark and decadent. A must-try for any chocolate lover!

Ingredients

Self-rising flour

½ cup(s)

All-purpose flour

¼ cup(s)

Unsweetened cocoa powder

¼ cup(s)

Uncooked rolled oats

Packed brown sugar

Fresh dates

½ cup(s), chopped, pitted, coarsely chopped

Chocolate mousse

124 gm, 2 containers, low-fat variety

Egg

1 large, lightly beaten

Olive oil

1 tbsp(s)

Fat-free skim milk

½ cup(s)

Walnuts

Instructions

  1. Preheat oven to 325°F. Lightly spray a 20 cm square cake pan with cooking spray. Line base and sides with parchment paper.
  2. Sift flours and cocoa into a large bowl. Stir in oats, sugar and dates.
  3. Whisk chocolate mousse, egg, oil and milk in a medium bowl until combined. Stir mousse mixture into flour mixture until well combined.
  4. Spoon mixture into prepared tin and sprinkle with walnuts. Bake for 25 minutes or until cooked in centre when tested with a skewer. Let cake stand in tin for 20 minutes before turning out onto a wire rack to cool completely. Cut into 16 squares to serve.
  5. Serving size: 1 slice
