This is similar to dessert rice pudding, but less sweet. The addition of fruit makes it a satisfying, hearty breakfast that even the kids will love.

Ingredients

1% low-fat milk

4 cup(s)

Uncooked white rice

¾ cup(s), long grain

Sugar

2 tbsp(s)

Raw egg

1 large, beaten

Vanilla extract

1 tsp(s)

Apple

1 medium, chopped

Dried dates

cup(s), pitted and chopped

Instructions

  1. In large saucepan, combine milk, rice and sugar.
  2. Bring rice to a boil over medium-high heat; reduce heat to medium and simmer, stirring occasionally, until rice is tender, about 25 minutes.
  3. Remove 1/2 cup rice mixture and mix with egg. Return to saucepan and add vanilla, apple and dates; heat through. If rice pudding is too thick add milk.
  4. Serve warm. Yields about six 3/4 to 1-cup servings.
