Fresh lemon juice

Fresh orange juice

Uncooked egg yolks

Salted butter

Instructions

In a small saucepot combine the sugar, lemon juice, orange juice, egg yolks, and salt.

Set over medium heat and whisk constantly until thickened, about 6-7 minutes.

Remove from heat and whisk in butter until melted. Strain and chill, in the refrigerator, covered, for one hour.

Serve with assorted fruit.
