Fresh lemon juice
Fresh orange juice
Uncooked egg yolks
- In a small saucepot combine the sugar, lemon juice, orange juice, egg yolks, and salt.
- Set over medium heat and whisk constantly until thickened, about 6-7 minutes.
- Remove from heat and whisk in butter until melted. Strain and chill, in the refrigerator, covered, for one hour.
- Serve with assorted fruit.
