Cranberry & Thyme Gin and Tonic

We've taken a traditional gin and tonic recipe and made it more festive for the holidays with the addition of fresh cranberries and a splash of citrus. Feel free to use frozen if you cannot find fresh as they work equally as well in this recipe!


Ingredients
Fresh cranberries
75 gm, or frozen
Sugar
2 tbsp(s)
Orange
1 medium
Fresh thyme
1 tsp(s), 3 sprigs, plus extra to serve
Gin
3⅓ fl oz
Tonic water
7 fl oz
Instructions

Using a vegetable peeler remove 4 strips of peel from the orange, taking care not to peel white pith. If any white pith is visible carefully remove with a small paring knife.

Place cranberries, sugar and orange strips in a small non-stick saucepan and heat over low heat. Cover with ½ cup (125ml) water and bring to a simmer. Cook for 5 minutes, add thyme and bring to the boil. Remove from heat, cover and set aside for 20 minutes to infuse. Strain through a sieve and discard solids. Cool syrup.

Divide syrup, gin and tonic among 4 chilled glasses. Add ice cubes, stir and serve garnished with extra thyme.
