Canned lump crabmeat is an easy protein source for a quick snack or meal. We perk up the flavours with fresh veggies and a good bit of zesty lime juice. Enjoy it over a bed of lettuce, with jicama slices, or with tortilla chips. Make sure to combine all the other ingredients first and add the crabmeat last; that way, the crab will remain in large chunks and won’t break apart too much.

Ingredients

Tomato

½ cup(s), finely chopped

Red onion

¼ cup(s), sliced, finely chopped

Yellow bell pepper

¼ cup(s), chopped, finely chopped

Cilantro

¼ cup(s), chopped

Fresh lime juice

3 tbsp(s)

Jalapeño pepper

1 medium, seeded if desired, finely chopped

Canned crabmeat

12 oz, lump variety, drained

Instructions

  1. In a medium bowl, toss together the tomato, onion, bell pepper, cilantro, lime juice, and jalapeño. Add the crabmeat; toss very gently to combine.
  2. Serving size: about 1 cup
