Corned Beef sandwiches are traditionally made with lots of melted butter, but our trimmed-down version keeps them light and crispy. Diet Thousand Island dressing

Ingredients

Rye bread

6 slice(s), cut into quarters, or 24 mini party breads

Cooking spray

1 spray(s)

Light thousand island salad dressing (10 calories per tsp)

¼ cup(s)

Low-fat hard or semisoft cheese

8 oz, Swiss, cut into 24 pieces

Cooked corned beef brisket

¼ pound(s), lean, cut into 24 pieces

Sauerkraut

1 cup(s), drained

Instructions

  1. Preheat oven to 350ºF. Coat a baking sheet with cooking spray. Place rye bread on baking sheet; coat each piece with cooking spray.
  2. Spread 1/2 teaspoon Thousand Island dressing on each piece of bread. Layer each with 1 piece each Swiss cheese and corned beef, and 2 teaspoons sauerkraut.
  3. Bake for 15 minutes. Serve immediately. Yields one corned beef bite per serving.
