This delightful soup doesn't have to be off limits. Adjust the ingredients a bit and you get all the flavour for a much lower calorie count than the original recipe.


Ingredients
Vegetable oil
2 tbsp(s)
Onion
6 medium, thinly sliced
All-purpose flour
1 tbsp(s)
Sherry (dry or sweet)
2 tbsp(s)
Canned fat-free beef broth
6 cup(s)
Table salt
⅛ tsp(s), to taste
Black pepper
⅛ pinch(es), to taste
French bread
6 slice(s), cut 1/2 inch thick and toasted
Gruyère cheese
⅓ oz, finely grated
Instructions

In a large nonstick pot, heat oil and very slowly sauté onions over medium-high heat until they are golden, about 40 minutes. Stir occassionally to make sure onions don`t stick to pan.

Add flour and mix to combine. Slowly pour in sherry and broth, stirring constantly. Bring to a boil. Cover, reduce heat and simmer for 20 minutes. Season to taste.
