Citrusy mojo is traditionally drizzled over starchy tubers like yucca. Here we substitute hearty but much lower calorie greens—definitely not old-school, but delicious nonetheless.

Ingredients

Uncooked collard greens

12 cup(s), (3 L) stems removed, cut into ribbons (2 bunches)

Olive oil

1 tbsp(s), (15 ml)

Garlic

2 clove(s), large, minced

Fresh orange juice

3 tbsp(s), (45 ml)

Fresh lime juice

3 tbsp(s), (45 ml)

Dried oregano

½ tsp(s), (2 ml)

Table salt

¼ tsp(s), (1 ml)

Instructions

  1. Place collard greens in a steamer basket inside a large pot of simmering water; cover and steam until tender, 5-10 minutes.
  2. Meanwhile, heat oil in a small saucepan over low heat; add garlic and cook, stirring, until garlic softens, about 1 minute. Stir in remaining ingredients; serve sauce over steamed greens.
  3. Serving size: 2/3 c greens and 1 Tbsp mojo
