Collard Greens with Garlicky Mojo

Citrusy mojo is traditionally drizzled over starchy tubers like yucca. Here we substitute hearty but much lower calorie greens—definitely not old-school, but delicious nonetheless.

Uncooked collard greens

Olive oil

Garlic
2 clove(s), large
Fresh orange juice
3 tbsp(s)
Fresh lime juice
3 tbsp(s)
Dried oregano
½ tsp(s)
Table salt
¼ tsp(s)
Instructions

Place collard greens in a steamer basket inside a large pot of simmering water; cover and steam until tender, 5-10 minutes.

Meanwhile, heat oil in a small saucepan over low heat; add garlic and cook, stirring, until garlic softens, about 1 minute. Stir in remaining ingredients; serve sauce over steamed greens.
