Cold Cucumber Soup
1 large, peeled and cut into chunks
4 medium, trimmed and cut into pieces
2 tbsp(s), fresh, sprigs
Plain fat free yogurt
Fat free skim milk
Orange bell pepper
1 medium, or yellow, cored, seeded and finely chopped
- In a blender, combine cucumber, scallions, dill and yogurt; purée. Pour mixture into a bowl. Stir in milk, salt and pepper.
- Pour into 4 bowls. Spoon 1/4 of peppers on top of each and serve. Yields 1 1/4 cups per serving.
