Cold Cucumber Soup

Ingredients
Cucumber
1 large, peeled and cut into chunks
Uncooked scallions
4 medium, trimmed and cut into pieces
Fresh dill
2 tbsp(s), fresh, sprigs
Plain fat free yogurt
1½ cup(s)
Fat-free skim milk
1 cup(s)
Table salt
½ tsp(s)
Black pepper
¼ pinch(es)
Orange bell pepper
1 medium, or yellow, cored, seeded and finely chopped

In a blender, combine cucumber, scallions, dill and yogurt; purée. Pour mixture into a bowl. Stir in milk, salt and pepper.

Pour into 4 bowls. Spoon 1/4 of peppers on top of each and serve. Yields 1 1/4 cups per serving.
