Revisit the diner classic! Gooey melted cheddar cheese combines deliciously with juicy beefsteak tomato and turkey bacon in this lunchtime treat. Swap in other light shredded cheeses for the cheddar and add chopped fresh herbs for a little Dijon mustard to the cream cheese for a flavour twist. (Kids won’t even notice!)

Light cream cheese

¼ cup(s), at room temperature

White bread

12 slice(s), thin

Reduced-fat cheddar cheese

18 tbsp(s), shredded (1 cup plus 2 tbsp)

Cooked turkey bacon

6 slice(s), halved crosswise


  1. Spread 1 tsp cream cheese on each slice of bread. On rimmed baking sheet, arrange bread, cream cheese–side up.
  2. Place 3 tbsp cheddar, 1 tomato slice, and 2 pieces of turkey bacon each on 6 slices of bread. Top each with 1 slice of remaining bread, cream cheese–side down, and press to adhere.
  3. Coat large nonstick griddle or 2 large nonstick sauté pans with nonstick spray and heat over medium. Cook sandwiches, pressing down lightly with spatula, until bread is browned and crispy and cheese melts, 2 to 3 minutes per side. Cut sandwiches in half crosswise.
  4. Serving size: 1 sandwich
