Classic Caesar Salad

If you thought this salad was off limits because it's loaded with fat and calories, think again: Our slimmed down version goes easy on the oil, cheese and portion size. Using a blender to whip together the dressing, means you can have the classic fave ready to serve in about 15 minutes. Leave out the anchovies from the dressing if you don't care for them. It will still have its characteristic salty-tangy flavour. Serve it alongside your favorite main dish pasta or with a steak and potato. Or make it a meal and top it with some grilled chicken, salmon, or shrimp.


Ingredients
Fresh lemon juice
¼ cup(s)
Black pepper
¼ tsp(s), freshly ground
Water
2 tbsp(s)
Grated Parmesan cheese
2 tbsp(s)
Garlic
2 clove(s), large, sliced
Olive oil
1 tsp(s)
Red wine vinegar
1 tbsp(s)
Anchovies canned in oil drained
2 average, finely chopped or mashed with a fork
Dijon mustard
1 tsp(s)
Worcestershire sauce
½ tsp(s)
Romaine lettuce
4 cup(s), chopped, rinsed well and patted dry
Fat-free packaged croutons
½ cup(s)
Instructions

Combine all ingredients, except lettuce, in a blender or food processor; puree until blended. (Note: Omit the anchovies if you do not like their flavour.)

Place lettuce leaves in a large bowl and toss with dressing until well coated. Sprinkle with croutons.
