This hearty, prep-ahead breakfast comes together in a snap and cooks in less than a half-hour. It sets you up for several days of easy, healthy morning meals: Simply reheat a piece in the microwave for about a minute and top with fruit. Shredded apple in the oat mixture adds a little crunchy texture and lots of sweetness, replacing much of the added sugar you might otherwise expect. Though we call for berries as the topping, you can use any fruit you have on hand—try sliced bananas, orange sections, pomegranate seeds, or diced pears.

Instructions

  1. Preheat oven to 375°F. In a large bowl, stir together oats, brown sugar, cinnamon, baking powder, and salt. In a medium bowl, whisk together milk, water, vanilla, and eggs. Stir milk mixture into oats mixture; fold in shredded apples.
  2. Spoon mixture into an 11 x 7-inch baking dish coated with nonstick spray. Sprinkle pecans evenly over top. Bake, uncovered, at 375°F until set, 25 to 30 minutes. Cut into 6 pieces and serve warm with berries.
  3. Serving size: 1 piece baked oats and ½ cup berries
