Cinnamon-apple baked oatmeal
Uncooked old fashioned oats
Packed brown sugar
Fat free skim milk
2 large egg(s)
2 medium, unpeeled, cored, and shredded
1 cup(s), raw, halved or quartered
- Preheat oven to 375°F. In a large bowl, stir together oats, brown sugar, cinnamon, baking powder, and salt. In a medium bowl, whisk together milk, water, vanilla, and eggs. Stir milk mixture into oats mixture; fold in shredded apples.
- Spoon mixture into an 11 x 7-inch baking dish coated with nonstick spray. Sprinkle pecans evenly over top. Bake, uncovered, at 375°F until set, 25 to 30 minutes. Cut into 6 pieces and serve warm with berries.
- Serving size: 1 piece baked oats and ½ cup berries
