Ingredients

Banana

2 medium, very ripe

Vanilla extract

1 tsp(s)

Fat-free sugar-free instant chocolate pudding mix

4 gm, about 1/2 tbsp of the powdered mix

Powdered peanut butter

2 tbsp(s)

Chocolate wafers

2 item(s), or 12 chocolate Teddy Grahams, broken up

Instructions

  1. Peel and break the banana into very small chunks. Place in a resealable plastic bag and freeze until solid, about 3 to 4 hours.
  2. Place the frozen bananas in a small food processor or high powered blender. Pulse until almost smooth, stopping occasionally to stir and scrape down the sides of the bowl with a rubber spatula. Add the vanilla extract, chocolate pudding mix, and powdered peanut butter. Pulse until smooth and well combined, stopping and stirring occasionally.
  3. Add half of the cookies and pulse until distributed. Scrape into a glass and garnish with the remaining cookies. Serve immediately.
  4. Makes 1 serving (about 3/4 cup).
