Chocolate mousse cups with candy cane "sprinkles"
The rich, creamy foundation for this nearly instant mousse is nonfat cottage cheese. It whips to a smooth consistency in a minute or so in the food processor, and then gets flavoured and sweetened with cocoa powder, powdered sugar, and vanilla. Spooned into small glasses and topped with whipped topping and crushed candy canes, it’s an easy, super-quick, very merry treat.
Fat free cottage cheese
Powdered sugar (confectioner's)
Unsweetened cocoa powder
Lite whipped topping

- Spoon the cottage cheese and vanilla into a food processor, and process on high speed until smooth, about 1 minute, stopping once or twice to scrape down the sides of the bowl. Add the powdered sugar and cocoa powder; process until well combined, about 20 seconds. Divide the mixture evenly among 4 small glasses or bowls; top evenly with the whipped topping and crushed candy canes.
