Couscous looks like small grains, but it’s actually tiny pasta, made with just water and flour. In Morocco, it is traditionally served as a side dish with tajines and stews. We call for basil to season the dish, but cilantro, parsley, or another tender herb would work beautifully, too. This will become one of your favourite weekday go-to side dishes not only because it's delicious, but because it takes just 10 minutes to prepare. Serve with any roasted or grilled fish, chicken, or meat.

Ingredients

Light butter

1 tbsp(s)

Kosher salt

¾ tsp(s)

Uncooked whole wheat couscous

1½ cup(s)

Semisweet chocolate

¾ oz, grated

Fresh basil

14 leaf/leaves, finely chopped, plus more for garnish

Cherry tomatoes

2 cup(s), halved

Instructions

  1. In medium saucepan, bring butter, salt, and 13/4 cups water to boil. Stir in couscous. Cover tightly with lid and remove from heat. Let steam for 5 minutes. Using fork, fluff couscous and break up any clumps. Sprinkle chocolate over couscous and stir until melted. Mix in tomatoes. Garnish with basil. Serve warm.
