Chipotle-cheddar venison sliders

These super-savoury sliders will be a hit at your next party. The easy-to whip-up chipotle sauce would be amazing on turkey burgers too!


Ingredients
Mayonnaise
½ cup(s), low-fat
Canned chipotle peppers in adobo sauce
1 tbsp(s), minced
Sweet pickle relish
2 tbsp(s), (or finely chopped dill pickle)
Ketchup
1 tsp(s)
Dijon mustard
½ tsp(s)
Uncooked venison (deer)
1 pound(s)
Minced onion
¼ cup(s)
Kosher salt
2 tsp(s)
Cooking spray
1 spray(s)
Low-fat shredded cheddar cheese
1 cup(s)
Hot dog bun
4 item(s), cut in thirds width-wise, or 12 slider buns
Lettuce

Instructions

Whisk together all chipotle sauce ingredients in a small bowl. Reserve (sauce can be made up to 3 days ahead).

To make burgers, combine venison, onion and salt in a medium bowl. Shape into 12 five-centimetre (two-inch) patties. Coat a large nonstick griddle with cooking spray and heat over medium-high heat. Cook patties for 3-4 minutes per side or until well browned.

Top each with 15 ml (1 Tbsp) cheese and melt. Serve each burger with one piece of lettuce and 15 ml (1 Tbsp) chipotle sauce.
