Chicken Tikka Masala (butter chicken)
Canned crushed tomatoes
1 small, finely chopped
Fresh garlic scapes
1 medium, minced
1 tsp(s), grated, and peeled
Dark brown sugar
Grilled skinless boneless chicken breast
Plain lowfat Greek yogurt
2 tbsp(s), chopped, plus some for garnish
- In a 2-qt slow cooker, stir together tomatoes, shallot, garlic, ginger, garam masala, brown sugar, salt, cumin, and coriander. Add chicken. Cover and cook 2 to 3 hours on High or 4 to 6 hours on Low. Stir in yogurt and chopped cilantro.
- Divide evenly between 2 plates or shallow bowls. Garnish with cilantro sprigs and onion.
- Per serving: 1 chicken thigh and about 1/2 cup sauce
