Our slow cooker version of chicken tikka masala (aka butter chicken) uses Greek yogurt for creaminess, along with classic spices like garam masala, cumin, and coriander.

Ingredients

Canned crushed tomatoes

½ cup(s)

Shallots

1 small, finely chopped

Fresh garlic scapes

1 medium, minced

Ginger root

1 tsp(s), grated, and peeled

Garam masala

1¼ tsp(s)

Dark brown sugar

½ tsp(s)

Kosher salt

½ tsp(s)

Ground cumin

¼ tsp(s)

Ground coriander

tsp(s)

Grilled skinless boneless chicken breast

½ pound(s)

Plain lowfat Greek yogurt

2 tbsp(s)

Cilantro

2 tbsp(s), chopped, plus some for garnish

Instructions

  1. In a 2-qt slow cooker, stir together tomatoes, shallot, garlic, ginger, garam masala, brown sugar, salt, cumin, and coriander. Add chicken. Cover and cook 2 to 3 hours on High or 4 to 6 hours on Low. Stir in yogurt and chopped cilantro.
  2. Divide evenly between 2 plates or shallow bowls. Garnish with cilantro sprigs and onion.
  3. Per serving: 1 chicken thigh and about 1/2 cup sauce

Notes

Serving idea: Warm naan bread can swap in for traditional rice as a side for this classic Indian dish.
