This recipe combines a variety of complex flavours. The sweetness of the strawberries is complemented by the tart fruitiness and mellow flavour of the balsamic glaze, and jalapeño pepper turns up the heat. Depending on your taste, you can swap in mint or cilantro for the basil, though strawberry-basil is a classic combo we love!

Ingredients

Cooking spray

4 spray(s)

Uncooked boneless skinless chicken breast

20 oz, 4 (5-oz) cutlets

Table salt

1 tsp(s), divided

Black pepper

½ tsp(s), divided

Strawberries

2 cup(s), diced

Store-bought balsamic glaze

3 tbsp(s)

Fresh basil

2 tbsp(s), thinly sliced

Scallions

2 tbsp(s), thinly sliced

Jalapeño pepper

2 tsp(s), minced

Instructions

  1. Spray ridged grill pan with cooking spray and set over medium-high heat.
  2. Sprinkle chicken with 1⁄2 tsp salt and 1⁄4 tsp pepper. Place chicken in pan and grill, turning once, until chicken is cooked through, 8–10 minutes.
  3. Meanwhile, to make salsa, combine strawberries, balsamic glaze, basil, scallions, jalapeño, remaining 1⁄2 tsp salt and remaining 1⁄4 tsp pepper in medium bowl and stir gently to combine.
  4. Serve chicken with salsa.
  5. Serving size: 1 chicken cutlet and 1/2 cup salsa
