The breading on this schnitzel gets its delicious flavour from fresh chives and grated cheese.


Ingredients
Uncooked boneless skinless chicken breast
1 pound(s), 2 [8-oz] pieces
All-purpose flour
2 tbsp(s)
Egg
1 medium
Fat-free skim milk
1 tbsp(s)
Panko breadcrumbs
1 cup(s)
Chives
2 tbsp(s), finely chopped
Grated Parmesan cheese
2 tbsp(s)
Olive oil
2 tsp(s)

Preheat oven to 400°F. Line a large baking pan with parchment paper.

Slice each chicken breast in half horizontally to make 4 thin cutlets. Place flour on a plate. Whisk egg and milk in a shallow bowl. Combine panko, chives, and cheese on a large plate. Working with one piece of chicken at a time, dust chicken in flour, dip into egg mixture, then coat in breadcrumbs. Place breaded chicken on a plate.

Heat oil in a large nonstick skillet over medium–high heat. Cook chicken until golden, 1 to 2 minutes per side. Transfer chicken to the prepared pan and bake until chicken is cooked and an internal temperature of 165°F, about 6 to 8 minutes.
