Ingredients

Uncooked sweet potato(es)

¼ cup(s), cubed

Uncooked boneless skinless chicken breast

3 oz, cut into small cubes

Uncooked cauliflower

cup(s), cut into florets

Romaine lettuce

Spiced Roasted Chickpeas

Creamy Salad Dressing

Instructions

  1. Preheat oven to 450°F(232°C). Line a large baking sheet with parchment paper.
  2. Cut the sweet potato and chicken breast into small cubes and slice the cauliflower into florets.
  3. Place the sweet potato, chicken breast, and cauliflower pieces in centre of the baking sheet. Drizzle with oil and season with paprika, garlic powder, turmeric, cumin, salt, and cayenne pepper.
  4. Bake for 20 minutes, or until desired tenderness and golden at the edges.
  5. Place romaine lettuce into a medium-sized bowl or plate and top with cooked sweet potato, chicken breast, cauliflower, and spiced roasted chickpeas.
  6. Drizzle with creamy salad dressing.
  7. Serving size: 1 salad
