This lightened up Reuben sandwich is piled with grilled chicken breast, sauerkraut, Swiss cheese, and thousand island dressing, and it hits all the marks. The instructions are fairly simple, but be sure to really drain that sauerkraut. If you've got some free time, you can also make your own batch to really personalize the sandwich (the store-bought kind works, too!) This dish is perfect for a midday meal.

Ingredients

Cooked skinless, boneless chicken breast

2 oz, thinly sliced

Sauerkraut

cup(s), well-drained

Reduced-calorie rye bread

2 slice(s), or whole wheat bread, toasted

Thousand Island dressing, reduced fat

1 tbsp(s)

Low-fat Swiss cheese

1 oz, cut into 2 thins slices

Instructions

  1. Combine chicken with sauerkraut.
  2. Divide dressing between both slices toast; top one piece toast with 1 slice cheese, chicken mixture, remaining slice cheese and remaining piece toast. Bake, microwave or heat in a skillet until cheese melts.
  3. Makes 1 serving.
