We seasoned up the coating of these chicken nuggets to add new pizzazz to an old fast-food favourite.

Ingredients

Uncooked boneless skinless chicken breast

1 pound(s), cut into 1-inch cubes

Liquid egg substitute

½ cup(s)

Dried plain breadcrumbs

½ tbsp(s), plain or whole wheat, toasted

Uncooked unenriched white cornmeal

¼ cup(s)

Garlic salt

¼ tsp(s)

Table salt

¼ tsp(s)

Smoked paprika

¼ tsp(s)

Cooking spray

1 spray(s), enough to coat chicken

Fat free salsa

¼ cup(s)

Fat free mayonnaise

¼ cup(s)

Black pepper

¼ pinch(es)

Cilantro

1 tbsp(s), minced

Instructions

  1. Preheat oven to 425°F.
  2. Dip chicken breast in egg substitute. On a plate combine bread crumbs, cornmeal, garlic salt, salt, paprika and pepper.
  3. Cover baking sheet with parchment paper. Spray with cooking spray. Arrange chicken on baking sheet. Spray chicken with cooking spray. Bake for 5 minutes, flip over and bake another 5 minutes.
  4. To make hot salsa sauce: in a bowl combine salsa, mayonnaise and cilantro. Stir well. Yields about 6 nuggets and 2 tablespoons sauce per serving.
