Uncooked boneless skinless chicken breast(s)
1 pound(s), cut into 1-inch cubes
Regular liquid egg substitute
Dried plain breadcrumbs
½ Tbsp, plain or whole wheat, toasted
Uncooked unenriched white cornmeal
1 spray(s), enough to coat chicken
Fat free salsa
Fat free mayonnaise
1 tbsp(s), minced
- Preheat oven to 425°F.
- Dip chicken breast in egg substitute. On a plate combine bread crumbs, cornmeal, garlic salt, salt, paprika and pepper.
- Cover baking sheet with parchment paper. Spray with cooking spray. Arrange chicken on baking sheet. Spray chicken with cooking spray. Bake for 5 minutes, flip over and bake another 5 minutes.
- To make hot salsa sauce: in a bowl combine salsa, mayonnaise and cilantro. Stir well. Yields about 6 nuggets and 2 tablespoons sauce per serving.
