Olive oil cooking spray

1 spray(s), or enough to coat baking sheet

Uncooked potato

2 large, Idaho, peeled and cut into 1/2-inch thick strips

Table salt

⅛ tsp(s), or to taste

Black pepper

⅛ pinch(es), or to taste

Low fat cheddar or colby cheese

4 oz, (1/2 cup) shredded

Preheat oven to 400ºF (204ºC). Coat a large baking sheet with cooking spray.

Arrange potatoes on prepared baking sheet and season to taste with salt and pepper. Bake until golden brown and fork-tender, about 40 minutes. Move potatoes so that they are close together on baking sheet; top with cheese. Bake until cheese melts, about 5 minutes more.
