Ingredients

Egg

2 large

Light cheddar cheese

1 oz, shredded

Shallots

1 small, finely chopped

Red bell pepper

1 small, finely chopped

Cooked Canadian bacon

2 slice(s), cut into small pieces

Cooking spray

5 spray(s)

Instructions

  1. Preheat waffle maker according to instructions. Lightly spray both cooking surfaces with cooking spray.
  2. Lightly whisk eggs in a medium bowl. Stir in cheese, shallot, bell pepper and bacon. Season with salt and pepper.
  3. Slowly pour ¼ cup of the egg mixture onto the bottom cooking surface of the waffle maker. Use the cover handle to pull the cover down and enclose waffle. Cook for 2-3 minutes, until golden brown and cooked through. Using a silicone spatula, transfer waffle to a plate and cover to keep warm. Repeat with remaining egg mixture to make 3 waffles in total, lightly spraying cooking surfaces with cooking spray between each waffle. Serve.
