Can we talk breakfast twists? Waffles, bacon, and eggs are always breakfast staples that are served separately on a dish. But what about combining them?! Here, we combine our favourites into a savoury and sweet breakfast, brunch, or even lunch. Perfect for a grab-and-go breakfast or sit-down meal with the family. This recipe is tailored to a mini waffle maker but feel free to double or even triple the recipe for a standard waffle maker.
Ingredients
Egg
2 large, lightly beaten
Light cheddar cheese
¼ cup(s), shredded
Shallots
1 item(s), finely chopped
Red bell pepper
1 small, finely chopped
Crisp cooked bacon
3 slice(s)
Cooking spray
3 spray(s)
Instructions

Preheat a mini waffle maker as per appliance instructions. Lightly spray both cooking surfaces with cooking spray.

Lightly whisk eggs in a medium bowl. Stir in cheese, shallot, red pepper, and bacon. Season with salt and pepper.

Slowly pour ¼ cup of the egg mixture onto the bottom cooking surface of the mini waffle maker. Use the cover Handle to pull the cover down and enclose waffle. Cook for 2-3 minutes, until golden brown and cooked through. Using a silicone spatula, transfer waffle to a plate and cover to keep warm. Repeat with remaining egg mixture to make 3 waffles in total, lightly spraying cooking surfaces with cooking spray between each waffle. Serve.
