Gooey melted cheddar makes these pita sandwiches super-satisfying while tofu bumps up the protein content-try them for a hearty breakfast or brunch!

Ingredients

Whole wheat pita(s)

4 small, cut across top to open

Fat free mayonnaise

¼ cup(s)

Uncooked scallion(s)

4 cup(s), coarsely chopped white & light green section only

Dijon Mustard

1 tsp(s)

Table salt

Shredded fat-free Cheddar cheese

1 cup(s)

Extra firm tofu

1 oz, diced

Black pepper

Plum tomato(es)

4 medium, seeded & diced

Instructions

  1. Preheat oven to 350. Combine mayonnaise, scallions, mustard, salt, and pepper in a medium sized bowl. Fold in tomato, cheese, and tofu and scoop mixture into pitas. Bake pita pockets on a foil lined cookie sheet for 10 minutes, flipping once halfway, or until cheese melts and pitas are toasted.
