Ingredients

Asparagus

1 pound(s), cut into 2-inch lengths

Snow peas

½ pound(s)

White wine vinegar

2¼ tsp(s)

Fresh lime juice

2¼ tsp(s)

Turbinado sugar

½ tsp(s)

Kosher salt

½ tsp(s)

Black pepper

Garlic

1 clove(s), large, grated or finely minced

Shallots

1 small, minced

Extra virgin olive oil

2 tbsp(s)

Fresh parsley

3 tbsp(s), minced

Instructions

  1. Bring a large pot of generously salted water to a boil. Add asparagus and snow peas; cook until bright green, about 1 minute. Drain vegetables; rinse under cold water until vegetables are cool to the touch and drain again.
  2. In a large bowl, whisk together vinegar, lime juice, sugar, salt, pepper, garlic, and shallot; let sit for at least 3 minutes. Whisk in oil until slightly thickened.
  3. Add asparagus, snow peas, and parsley to dressing; toss to coat and serve.
