Carrot muesli bars

Uncooked rolled oats
2 large egg(s), lightly beaten
2 medium, finely grated
- Preheat oven to 350°F. Melt margarine in a large saucepan over low heat. Brush a little melted margarine over base and sides of a 30cm x 20cm (base measurement) baking pan. Line base and sides with parchment paper.
- Stir maple syrup into melted margarine. Add oats, eggs, carrots, raisins, zest and allspice to syrup mixture and stir until well combined.
- Spoon mixture into prepared pan and bake for 20 minutes or until a skewer inserted in centre comes out clean. Set aside in tin for 30 minutes to cool before turning out onto a clean board. Cut into bars.
