Ingredients

Reduced-calorie margarine

100 gm

Maple syrup

2 tbsp(s)

Uncooked rolled oats

2½ cup(s)

Egg

2 large, lightly beaten

Carrots

2 medium, finely grated

Raisins

¼ cup(s)

Orange zest

1½ tsp(s)

Ground allspice

1½ tsp(s)

Instructions

  1. Preheat oven to 350°F. Melt margarine in a large saucepan over low heat. Brush a little melted margarine over base and sides of a 30cm x 20cm (base measurement) baking pan. Line base and sides with parchment paper.
  2. Stir maple syrup into melted margarine. Add oats, eggs, carrots, raisins, zest and allspice to syrup mixture and stir until well combined.
  3. Spoon mixture into prepared pan and bake for 20 minutes or until a skewer inserted in centre comes out clean. Set aside in tin for 30 minutes to cool before turning out onto a clean board. Cut into bars.
  4. Serving size: 1 bar
